Margaritas Peaches Pork Salad

Grilled Pork Salad with Balsamic Peaches & Watermelon Margaritas

We ended up making this dinner at the end of July but haven’t quite gotten around to posting some of these. Since it was summer, we decided make use of the fresh summer ingredients we had available.
First, before we started cooking, t’was necessary to mix up some watermelon margaritas. Then we got to marinating some boneless pork chops, red onion, green peppers and ripe summer peaches in a balsamic dressing.  We then threw everything on the grill, sliced up the pork chops and put everything over a layer of arugula.
