Mint chocolate chip Smoothie

Happy Friday friends! We are on our way to Seattle, WA for the weekend and are so excited to be reunited with some of our closest friends who moved there a few months ago. We’ve never been, but we hear it has an amazing food scene that we can’t wait to check out!

If you follow us on Instagram, you may have seen us post this smoothie recipe as part of the #TIUcookoff challenge. We are excited to see if our recipe gets chosen, but figured we should post it here as well since it’s an awesome recipe either way!

Getting in lots of greens is so key to staying healthy. Although we usually use spinach in our smoothies for flavor, we really like kale for this one because the mint is strong enough to mask the flavor and kale kills it in the nutrients department. Check out this article for more information on the benefits of kale.

We hope you love it as much as we do, and please leave us a comment if you try it out!

Mint Chip Smoothie Recipe

Serves 2

  • 3 cups chopped kale
  • 1 cup unsweetened vanilla almond milk
  • 1/2 avocado
  • 2 tbsp flaxseed
  • 1 frozen banana
  • 3/4 cup frozen cucumber chunks
  • 10-12 fresh mint leaves
  • 2 scoops Perfect Fit Chocolate Protein
  • Handful of ice
  • 1.5 tbsp raw cacao nibs

Blend all ingredients except cacao nibs in a blender until smooth. If it’s too thick, you may need to add more almond milk for the right consistency. Once blended, add cacao nibs and pulse a few times to combine. Top with extra cacao nibs. Enjoy!
