Chocolate Peanut Butter Smoothie Bowls

It was a big day in the Putzeys household today….we bought a Vitamix. We have been using our poor blender every day for the past few months and finally did it in trying to make oat flour (pro tip: use the food processor for that one).

So our tried and true blender is donezo (bummer), but we are finally getting around to posting our latest addiction: green smoothie bowls (yay!). I know, green smoothies probably don’t sound THAT amazing, but really – these are delicious. Although they look green, they taste like peanut butter and chocolate and eating them in bowl form is just so much more satisfying than drinking your breakfast. Trust us on this one and try them!

Yes we buy spinach at Costco, and yes we eat all of that in a few days. You can also always freeze fresh greens for smoothies so don’t be scared to buy too much!

Here’s the recipe we follow most of the time. There are lots of variations you can make based on personal preference for texture and taste, so we’ve tried to give a few options for ingredients. Expect more recipes like this as we begin playing with our new Vitamix…

Chocolate Peanut Butter Green Smoothie Bowls
Inspired by Veg Up Challenge
Serves 2

Ingredients: (see below for all the products we use)

  • 1/2 cup almond milk or coconut milk
  • 3 cups fresh spinach (or any other greens)
  • 1 cup frozen cucumber (or frozen celery or zucchini)
  • 1 frozen banana
  • 2 scoops chocolate protein powder, or just use cacao powder
  • 2 tbsp peanut butter powder or 1 tbsp regular peanut butter (or any other nut butter)
  • 1 tbsp chia seeds
  • 1-2 ice cubes (optional)
  • Granola and Cacao Nibs to sprinkle on top

Add the milk to the blender first, then add the veggies, banana, protein powder, peanut butter, and chia seeds. Blend until smooth. If you have trouble blending everything, you may need to stop the blender a few times to push everything into the blades or add a little extra milk. It should be very thick though, so don’t add too much unless you’re more of a smoothie-drinker. Pour into a bowl and top with granola and cacao nibs. Feel like a badass that just ate veggies for breakfast.
