On a recent Sunday we were feeling particularly bold (and free of other obligations), so we took the opportunity to spend most of the afternoon cooking a double batch of winter minestrone soup.
When making soup, we love to make double batches because it freezes so easily and makes for quick and easy lunches or dinners during a busy week.
This soup is chock full of veggies, and can be adjusted as needed, leaving out the pasta or pancetta, or mixing up the kind of vegetables you put it in.
