For our last meal of Labor Day weekend, we finally made use of the outdoor grill at Julia’s apartment complex. Since nectarines are in season, we searched for a recipe that used them and landed on this simple pork dish. To make things easy, we just picked a variety of summer veggies to grill on the side.
Grilled Veggie Kebabs:
- 1 squash
- 1 zuchinni
- 12 cherry tomatoes
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried rosemary
Slice squash and zucchini into 1/2 inch thick slices and put in a large mixing bowl. Add cherry tomatoes, olive oil, and spices and toss to combine. Put the veggies on skewers and grill until cooked through and slightly charred: about 5-10 minutes each side. Remove from skewers and serve warm.
