Summer Southwest Shrimp Salad

Tonight, we were in the mood for something fresh and healthy. Although sometimes Philippe is sceptical about having salad for dinner, he put his trust in Julia to make one that he would love. We decided that rather than going with a recipe, we would just choose a southwest theme and add whatever we want!

So, our spinach salad had lots of yummy toppings: fresh red pepper, cherry tomatoes, red onion, and avocado. We also added some cooked quinoa, black beans, corn, and feta cheese. To top it all off was grilled shrimp seasoned with old bay seasoning. For dressing, we mixed together a little red wine vinegar and olive oil.
